Today I decided to make some cakes with cream. But not just whipped cream and mark it done, no, I wanted something more, something with double layer of cream. So, I came out with idea of this one below.
What do you think? Isn't it look delicious? And taste as much.
I must admit, it wasn't 5 min easy make cake but oh so wort it. So, without much more empty writing, I will give recipe for this one.
Ingredients:
Pudding cream:
1 bag of instant vanilla pudding mix
butter - 200g (0.88 cups)
cocoa - 1 table spoon (can be more if you prefer)
chocolate chunks
Whipped cream topping:
Mascarpone cheese - 250g
whipped cream - 400g
powder sugar - 50g
vanilla extract - 1 teaspoon
You also need 2 sponge cake and fruits as topping. I used strawberries, raspberries and blueberries.
Instruction:
First let's take care of pudding cream.
Take out butter from the fridge, put it in a bowl and leave to warm up to room temperature, it's very important that butter is soft. In a meant time prepare pudding as it said on bag, you got this. After that leave it to cool down and stir it from time to time. If pudding will be too worm it can melt butter, We REALLY don't want that.
When butter is soft start to mix it on small gear till it get smooth creamy. Than, still slowly mixing, add pudding spoon by spoon, not all at once. When you use all pudding and it combine nicely with butter add cocoa and mix for few second to distribute powder even. Don't to it too long tho or butter get chunky again. You can add chocolate chunks to it and stir it with spoon or spatula.
Put cream on a base distributing it even, and cover it with another sponge cake. Put all of it in the fridge for around 1 hour too cool down.
In a mean time We gonna prepare whipped cream. This one is very easy and quick so you don't need to do it right away.
So, put mascarpone cheese to a bowl, add powdered sugar and vanilla extract and mix it on low speed. When everything will nicely combine add whipped cream, look tho, it can splash, even on low speed. You gonna mix for a couple of minutes.
When cream is stable and it's sliding from bowl you can put it on a cake.
The only thing that is left is to decorate it with fruits and leave it in a fridge for a while.
Small advice. Leave for a night to rest, it taste better.
