Delicious homemade pear pie

Hello.

Today I wanna show you my interpretation of pear pie. You may ask "Pear pie? Is it a thing?". Well, it is, it's like any other fruit pie, apple for example. But it's better that I show you than just talk.

Doesn't look that bad, does it?

Now, let me tell you how I made it.


Crust pie:

Ingredients:

  • all purpose flour - 500g (2 cups) (it may take more if dough is runny)

  • whole eggs - 4

  • caster sugar - 1 table spoon (it can be more if you prefer more sweet crust)

  • salt - only a pinch

  • butter - 200g (little bit less than a cup)



Instruction:

It's not that hard. Just put every dry ingredient in to the bowl and mix them. Cut butter in small cubes, it will make mixing easier, add eggs and start mixing it. If you see that dough don't want to get together add more flour, not too much tho cos it can get too dry, it must still stick together and be moist. Just try adding flour spoon by spoon.

When dough is ready cover bowl and put it in to to fridge for 30-60min.

In a mean time I recommend to you to prepare filling, because it also need to rest, which I will tell you about it a little bit lower.


Split dough in two pieces, one bigger. On a table spill some flour and roll out the bigger dough in a circle. The thicker the harder crust later. Put it in to the pie mold and stab bottom with a fork in a few places, it helps to bake dough. You can form edges however you want.

Now, you can put this in to the oven for a ~30min, just remember put foil or baking paper in to it with rice or bean to keep crust in shape. Or you can just put it a side and wait, if you do so the crust will not be so even but it's about preferences.

About smaller dough ball. Roll it out, and cut stripes from it. Again, the thinner the easier to cut it later.


But now after that, let's jump to a filling.


Filling:

Ingredients:

  • caster sugar - 125g (1/2 cup)

  • all purpose flour - 70g (1/4 cup)

  • starch, it can be corn, potato or even tapioca - 1 table spoon

  • cinnamon - 1/2 teaspoon

  • lemon juice - 2 table spoon

  • pears

You can also add some bourbon to it, but I didn't have it so I skipped it and it still came out delicious.


Instruction:

First put all dry ingredients to a bowl and mix them together.

After that peel pears and cut them however you want. I cut them in to chunks, but you can cut them in stripes or circles, that doesn't matter. Prepared pears put in to the bigger bowl, pour them with lemon juice and mix it a little. Add dry ingredient's again mix it all well, to cover all pear chunks with it. And let them rest for a while. Sugar will take out juices from fruits and that need to take time.


In a mean time you can go back to your dough and roll it out.


When you have all ready, crust in a mold, filling nice rested you can finish it.

Pour filling to a crust, use all of it, all juices. Take stripes and put them on top, something like chessboard.


Now we're gonna egg wash top of pie. Take two egg yolks stir it a little, and smear top of a pie with it using brush. Or you can use a little bit of olive oil instead. And sprinkle it with a little bit of sugar.


Put everything to oven on around 170*C (338*F) for around 90 minutes. When there will be last 20 minutes you can cover top using foil or baking paper, so it wont get burned.

After that time take out your pie and let it rest and cool down for a 2-3h so filling will not be so runny.


Enjoy your pie.
